Some people say that making a cheesecake is hard. I don't say that. But what I do think is making a cheesecake not crack is hard. Of course what do I know? I've only made one cheesecake before. But here are some tips to making an awesome cheesecake.
1. Mixing in eggs
When you add the eggs do it in a pattern of adding an egg then mix. Add another egg than mix. If you don't your cheesecake will turn out all lumpy.
2. Getting your cheesecake to not crack
As I said getting your cheesecake not to crack is super hard. Some tips are:
a. When you bake your cheesecake leave the oven door open a little bit.
b. Also when you bake the cheesecake fill a small pan with water and put it under the rack that your cheesecake is on.
3. Making the crust
When you make the crust the easiest way to get it fine enough for the recipe is to take a few graham crackers and put them in a Ziploc freezer bag. Close the bag securely. Then take a rolling pin and roll over the graham crackers. When you think it's fine enough and there is enough to make the crust open the bag and pour them into a measuring cup to see if there is the right amount of crumbs. If you have too much then throw the extra away. If you have to little just put in some more graham crackers and keep rolling!
4. Don't sweat it
I've never made a cheesecake that hasn't cracked so if it does just cover the crack up with a topping. I suggest whipped cream. Of course don't do what I did when I made the whipped cream. I accidently forgot to add sugar. So we were pretty much eating whipped milk.
